Tina's Balsamic Glazed Chicken and Creamed Spinach

Balsamic Glazed Chicken
Points Plus Value 5 points per serving (4 oz of cooked chicken)

1 1/5 pounds chicken breast
1/4 cup balsamic vinegar
1 tbsp light brown sugar (packed)
1/2 tsp of minced garlic

In small sauce pan warm balsamic vinegar, brown sugar, and minced garlic. Heat on medium heat for about 8 minutes so flavors can marry together.
Place chicken in baking dish. Pour marinade over chicken and refrigerate for a couple hours (the longer the better). 
Broil chicken in baking dish for about 7 minutes on each side or until meat thermometer reads 165 degrees. 
Serving size is 4 oz of meat. Make approximately 4 servings.

Creamed Spinach
Points Plus Value 2 points per serving (1/2 cup)

1 small onion chopped
3 tbsp of Oscar Mayer Bacon Bits and Pieces for Cooking
3 tbsp of water
1 - 9 oz bag of spinach
1/4 cup half and half

In pot cook onions with water and bacon bits until tender. Add spinach and cream and cook for about 5 to 8 minutes or until spinach is tender. 
Makes approximately 3 - 1/2 cup servings. 







Tina's Steak and Egg Brunch Pizza


Tina's Steak and Egg Brunch Pizza
Points Plus Value 9 points for whole pizza

1 Flatout Light Original Bread
1/4 cup canned tomatoes, drained
1/4 cup Kraft Fat Free Shredded Mozzarella Cheese
1 oz of cooked sandwich steak (I make about a pound and use the rest for salad)
1/4 cup sliced peppers (I prefer red but you could use green or yellow as well)
1 egg

Preheat your oven to 350 degrees. Place flatout bread on cookie sheet. Add tomatoes, cheese, cooked stead and peppers. Cook for about 10 to 15 minutes or until your desired crispness.
While pizza is cooking fry one egg, over easy.
Place egg on pizza when done.

Tina's Pear and Oat Delight


Tina's Pear and Oat Delight

Points Plus Value 2 points per pear half
Makes 7 to 8 pear halves

1-15 oz can of pear halves in pear juice
1 tsp of rolled oats in each pear half
1 tsp of brown sugar in each pear half
1 tsp of Land O'Lakes Light Spreadable Butter on each pear half

Preheat oven to 350 degrees.
Place pear halves in baking dish with hollow side up. In each pear half place 1 tsp rolled oats, 1 tsp brown sugar, and 1 tsp light butter. 
Bake for about 20 to 25 minutes. Top with a tsp of fat free cool whip for 0 points!

You can have 2 pear halves with 1 tsp of far free cool whip on each one for only 4 points!


Tina's Chicken Chimichangas


Tina's Chicken Chimichangas

Points Plus Value 4 Points
Serves 10


1 pound of chicken breasts (seasoned with salt and pepper)
1 package of Taco Bell Taco Seasoning
4 oz can of Ortega Chopped Green Chiles
14.5 oz can of Diced Tomatoes, drained
1/2 cup Kraft Fat Free Shredded Cheddar Cheese
10 Mission Carb Balance Tortillas

Preheat oven to 350 degrees. 

On stove top, cook chicken. Once cooked thoroughly cut into small bite size chunks.

Mix chicken, taco seasoning, diced chiles, cheese and tomatoes together.

Put a 1/2 cup of chicken mixture into the middle of each tortilla and fold up. Place seam side down in  baking dish. 

Bake for about 35 to 45 minutes or until tortillas begin to crisp up.

Each chimichanga is 4 points plus. Add some fat free salsa, some lettuce and some fat free sour cream for a 0 point fill up! YUMO!

Tina's Turkey Meatloaf


Tina's Turkey Meatloaf 
Points Plus Value 5 points
Serves 6

1 tbs Land o Lakes Light Spreadable Butter
1 medium green pepper
1 medium onion
1 large egg
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tbs minced garlic
2 tsp Lawry's Seasoned Salt
1/4 cup Progresso Italian Style Bread Crumbs
1/2 cup Kraft Fat Free Shredded Cheese
1.25 pounds of Jennie-O Lean Ground Turkey

Preheat oven to 350 degrees. In small pan put better and cook green pepper and onion until tender.
Mix remaining ingredients in large bowl. Add peppers and onions.
Pat mixture into bread pan.
Put in oven and bake for 1 hour or until internal temp reaches 160 degrees.

Cut into 6 slices. Serve with green beans for a 0 point option!
(makes an awesome sandwich for the next day as well!)
